-communication is #1 the whole team has to know what’s going on. Transparency from Vendors to doorman, all the way up to General managers. Have talking points in place and other items to offer in place of. Being prepared and everyone on same page until the vendor can come through with the right product or proper substitute.

Overview the forecast demand, streamline inventory tracking, and secure reliable suppliers with backups. Adapt menus, promote high-stock items, and empower staff to handle substitutions smoothly. Cross-department collaboration and proactive guest communication ensure seamless service, while post-event evaluations help refine strategies for future large events. The most important thing is to build a strong relationship with product suppliers so they can support us during emergency situations.

The tagline casino got me interested and amused that the AI appetite for key hospitality key words to add things like team play, etc., is like old chefs used add parsley on all dishes. Las Vegas used to attack people from with incredible buffets and 2.95 prime rib dinners (ups i just aged myself) The casino/hotel mix of sales is a very interesting- room rate and food spend is not a priority - for the casino play revenue is (win % the ultimate measure)- - the amount of alcohol served at casinos is huge. The question also mention convention- this actually make things easier since is programed many months in advance- to focus on PARSTOCK etc., and other elementary stuff seems demagoguery- the focus is revenue and guest loyalty.
