Your bar's inventory is being impacted by theft or pilferage. How do you prevent losses and maintain control?

Theft and pilferage can pour out profits. Keep your bar's inventory secure and losses at a minimum with these strategies:

- Conduct regular audits. Surprise counts can reveal discrepancies early.

- Install security cameras. Visible surveillance deters theft and aids in accountability.

- Train staff on the impact of theft. When employees understand the consequences, they're less likely to pilfer.

Open Communication: Let staff know that inventory control is about business efficiency, not micromanagement. Explain the Impact: Show them how losses affect bonuses, promotions, and overall bar performance. Encourage Ownership: Give senior bartenders responsibility for inventory management to build trust. Standardized Pouring Techniques: Use jiggers or controlled free pouring training to ensure consistency without accusing staff. Encourage Honest Waste Tracking: Instead of penalizing spills, have an open log for mistakes to separate waste from theft. Make Audits Routine, Not Suspicious: Conduct inventory checks as a part of regular operations so it doesn’t feel targeted.

If inventory stock is large in value and count, then it is recommended for : - Frequent/monthly staff rotations. - Motion sensors to be installed to alert any activity during in-active times. - Access to inventory only during certain hours on certain days(if possible). - Access only for authorized personnel. - Surprise and random counts, at least twice monthly.
